5 Sauces That Every Gourmet Mama Should Know

White Sauce

2 Tablespoons butter

2 Tablespoons flour

1/4 teaspoon salt

dash of pepper

1 1/2 cups milk

In a small saucepan, melt the butter and stir in the flour, salt and pepper until it forms a smooth paste. Stir constantly while you add the milk and continue to cook and stir over a medium heat until it is thick and bubbly.

Cheese Sauce

Prepare a white sauce and over a low heat stir in 1 1/2 cups of shredded cheese of your choice. Cheddar is my personal favorite to use.

Sweet and Sour Sauce

1/2 cup packed brown sugar

4 teaspoons cornstarch

1/2 cup chicken broth

1/3 cup red wine vinegar

2 tablespoons corn syrup

2 tablespoons soy sauce

1 1/2 teaspoons grated fresh ginger

1 clove garlic, finely minced

In a small saucepan, mix together sugar and cornstarch. Stir in the rest of the ingredients. Stir and cook over a medium heat until thickened and bubbly and then cook for another 2 minutes.

Cranberry Sauce

In a medium saucepan, mix together 1 cup of sugar and 1 cup of water. Bring to a boil and stir until the sugar is desolved. Boil for 5 minutes and add 2 cups of cranberries. Return to a boil and reduce to a medium heat. Simmer for 3-4 minutes, stirring occasionally.

Hot Fudge Sauce

3/4 cup semisweet chocolate chips

1/4 cup butter

2/3 cup sugar

1 5-ounce can evaporated milk

In a small saucepan, melt the chocolate and butter together. Add the sugar and gradually stir in the evaporated milk. Bring to a boil and heat over a low heat for 8 minutes. Remove pan from heat and serve or store and reheat later.
