4th of July Deviled eggs, patriotic eggs

These eggs are insanely simple to do and there would really be nothing to making a huge batch of them for a family reunion or a church picnic, just increase the amounts! For Canada Day Eggs, just dye the outside red instead of blue and you have the perfect snack for the holiday.

Patriotic Eggs

Serves 4

4 eggs
1/2 tsp. paprika
3 Tblsp. mayonnaise

Blue and red gel food coloring

Place the eggs in enough water to cover and bring to a boil. Boil for ten minutes and cool.

In a small bowl, mix warm water and the blue food coloring. I used about 1/4 teaspoon of gel coloring to a cup of water for a good, strong color.

Peel the eggs and place in the colored water. Soak for 5 minutes or until the desired color is reached, turning frequently to ensure even coloring. Rinse under cold water to remove any excess coloring (so you don’t accidentally dye the inside of the egg when handling it) and pat dry with a towel.

Cut the eggs in half lengthwise and scoop out the yolk. Mix the yolks, paprika and mayonnaise in a small bowl until smooth. Add enough gel coloring to get a nice red (I used Christmas Red) and mix thoroughly.

Pipe the yolk mixture back into the egg halves and chill. You can make these up to a day ahead, just cover the tray and keep chilled.
