3 Bean Salad

3 bean salad
Looking for a refreshing dish that can be served to family or guests? This 3 bean salad is bound to be a huge hit. You can either cook the beans up yourself, or use canned beans for a quick and easy meal.

I made this dish for dinner the other day and we had leftovers for lunch, it’s so filling! While it is delicious fresh, you can also store it in the fridge overnight and the flavors will meld and mellow during the night.

3 Bean Salad

makes 4 servings

1 c. white beans
1 c. red kidney beans
1 c. black beans
1 onion, minced
3 tomatoes, chopped
juice of one lime
1 Tblsp. fresh parsley, chopped

Toss all ingredients together. You can add salt if needed. Serve chilled.

Tip: If you cook the beans yourself, you can cut the cooking time by soaking the beans overnight, draining the water and cooking them in fresh water with a pinch of baking soda to help soften them.
